On the listing type pages, I have an issue.
Here is the screen shot: I have put a red arrow pointing the issue.
Also, not sure if it's possible to hide some of those sorting options, is this in the admin area to hide things like: Posted by?

yes if you have added it, it would be. in your categories you have build options one of them is build sort form, from memory so you may have added it there.
also yes to show posted by not sure where ? but yes its in there hiding
