So when I create a listing type or listing category, the key ID is created and will be grayout, meaning you are unable to change it.
I made on listing type called: cars, now I want to change it through phpmyadmin to vehicles, is it a bad idea?

Yes it's a bad idea.
But you can find key of your listing type and after change anywhere: account_types, blocks, config, lang_keys, listing_types, pages, search_forms tables.
I suggest you remove current type and create a new listing type.
