clear categories for listing fields

Is there a way to quickly empty categories for listing fields, so i can rebuild them?

It's not clear. Maybe you mean the update cache of categories i fields.
Admin panel -> Common -> Refresh -> Update system cache

i want to remove all the listing fields from the categories.And add them again.
