Show only specific countries

I would like to only show the US and Canada, how do I disable countries I do not need?

Right now you can deactivate all countries manually through Admin Panel.

In Plugins > Multifield > countries entry > Build > disable/remove counties you don't need

then in Common > Refresh > click 'Update system cache'

If I deleted Canada by error, is there a way to recover it?

No unless you have backup of your mysql database that you can restore

You can restore/import it via Import Data > World Locations Database5 > Select items to be imported > check your country > Import
