My website is specific to one country. I would like to "grey out" the country field (disabled) where it shows the country on the form but not changeable by the user whether adding account or adding or editing a listing. Not sure where to alter this.

You would probably just disable all other countries ?
Probably disable as suggested by Pete and then remove the country field from your category and search forms after selecting "build".
However, make sure to allow for more countries to be added in case your website is a smash.
Facebook originally began with listing people from Harvard, then started adding colleges one by one before going international.
